Dining

From Green Chile Burgers to Buffalo Steak. All the outdoor activities around Taos result in ravenous appetites. Fortunately we have more than 50 restaurants prepared to appease your hunger. Classically-trained chefs create sophisticated dishes that appeal to both eye and palate. Many chefs rely on local, organically-grown produce, offering fresh greens, herbs, tomatoes, tender green beans and baby squash. In Taos, we were organic before organic was cool.

Several homestyle eateries serve popular local dishes such as tamales, enchiladas, chile rellenos and posole. In Taos, chile can be green or red, hot or mild. If you can't decide which one to try, ask for "Christmas," our word for a combination of red and green.

You will have a remarkable opportunity to sample an excellent selection of fine wines at good prices. Many of our restaurants maintain sophisticated wine cellars and three are recipients of the Wine Spectator Award of Excellence for the diversity and completeness of their wine lists.

Restaurant ambiance is as varied as the cuisine. Savor the atmosphere of an energetic, bustling, open-air kitchen or linger on a shaded garden patio. Dine at an alpine log cabin or a traditional adobe warmed by piñon-blazing fireplaces. ¡Buen apetito!
