Classically-trained chefs create sophisticated dishes that appeal to both eye and palate. Many chefs rely on local, organically-grown produce, offering fresh greens, herbs, tomatoes, tender green beans and baby squash. In Taos, we were organic before organic was cool.

Several homestyle eateries serve popular local dishes such as tamales, enchiladas, chile rellenos and posole. In Taos, chile can be green or red, hot or mild. If you can't decide which one to try, ask for "Christmas," our word for a combination of red and green. A movement growing in popularity, farm to table dining seeks to reduce or eliminate costly and environmentally questionable distribution practices.
